Cake 1/2 cup butter (softened) 2/3 cup brown sugar 2 eggs ½ tsp vanilla extract 1/4 cup cream 1 teaspoon lemon zest 1 tablespoon fresh lemon juice 1 cup + 2 tbsp all purpose flour 1/2 tsp baking powder 2-3 ripe peaches, roughly chopped with skin on
Preheat oven to 350. Line a 8x8 inch square pan with parchment paper. Beat cream cheese, vanilla and sugar until creamy. Set aside.
Rinse the fruit and chop them with the skin on. Add the lemon zest and lemon juice. Set aside.
Make the cake batter: Sift flour with baking powder. Cream butter and brown sugar until light and fluffy. Add eggs one by one, beating well after each addition. Add cream and vanilla extract. Pour in flour in two additions and beat until combined.
Spread half of the batter into the pan. Put half of the cream cheese over the batter, add half the fruit. Add the rest of the batter, spread it around, then the cream cheese and last the rest of the peaches. Use a knife to mix cream cheese and batter Gently press the fruits into the batter. Bake for 35 minutes or until skewer comes out clean.
