Chocolate Spice Cake Aug 24, 2013 15:42:07 GMT -5 Quote Select PostDeselect PostLink to PostMemberGive GiftBack to Top Post by PurplePuppy on Aug 24, 2013 15:42:07 GMT -5 Chocolate Spice CakeIngredients:Servings: 121 cup butter or 1 cup shortening2 cups sugar4 eggs, yolks and whites separated3 unsweetened chocolate squares, melted1 cup mashed potatoes1/2 lemon, zest of1 teaspoon vanilla2 cups flour2 teaspoons baking powder1 teaspoon cinnamon1/2 teaspoon clove1/2 teaspoon nutmeg1/2 cup milk1 1/2 cups pecans, lightly toasted and choppedDirections:Heat oven to 350 degrees.Grease and flour a bundt pan.Cream butter and sugar.Add egg yolks one at a time til blended.Stir in melted chocolate, mashed potatoes, lemon rind, and vanilla.Sift flour, baking powder, cinnamon, cloves and nutmeg together.Ad flour mixture to rest of batter alternating with milk.Fold in pecans.Beat egg whites and carefully fold them in.Bake 45-50 minutes or until toothpick inserted in center comes out clean.Cool 15 minutes in pan then turn out to cool completely.
