Maryland is known for its famous Maryland Chicken, Chicken Chesapeake and Maryland Crab Cakes; we also use Old Bay seasonings(and lots of it) on everything. That's a Maryland thing.
So what is your native cuisine, something that is unique to your region and is a regional specialty? Include recipes if you have them.
Here is the recipe for Maryland Chicken:
Classic Chicken Maryland with Gravy recipe (for bonus points add plenty of Old Bay)
Ingredients
2 chicken thighs, wings or breasts
1 cup cold milk
1 teaspoon salt
1/2 teaspoon pepper, black
1/2 teaspoon dried thyme, or oregano, or sweet basil, or all three
1/4 teaspoon paprika, if available
2 cups flour
2 tablespoons butter
Gravy Ingredients
Some chicken giblets
1 clove garlic, minced
1 medium onion, minced
1/2 cup chicken stock
1/2 cup milk
Sides
Corn on the cob, mash potatoes, fried bacon slices
Cooking Directions
(Part A) Cooking the chicken
1. Mix the flour with salt, pepper, thyme (and/or orgeano, basil), paprika in a bowl
2. Dip the chicken thighs, wings or breasts into the cold milk.
3. Remove from milk and cover with the flour mixture.
4. Heat a pan using medium-high heat, and add the butter to the pan.
5. Fry the chicken pieces until golden on both sides.
6. Then reduce to a very low heat, and let the chicken cook through. Turn it over once.
(Part B) Making the gravy
7. Heat a pan to medium heat, adding in butter.
8. Add in chicken giblets, garlic, onion.
9. Fry for 30 seconds or so to develop the flavor of the onion and get the juices out of the giblets.
10. Add milk and chicken stock, and bring to boil.
11. Then simmer for a few minutes.
12. Strain, and pour over the chicken when ready to serve.
Add sides like corn on the cob, mash potates and bacon slices for a full meal.
Serves: 1 (for more people, just multiply the recipe by the number of people you want to serve)
Chicken Chesapeake: (original Phillips of Ocean City, Maryland recipe THE BEST)
Phillips Chicken Chesapeake
Ingredients
4 chicken breasts
1/2 lb. Phillips Backfin Crab Meat
1/2 lb. Phillips Jumbo Lump Crab Meat
¼ C. parsley, chopped
¾ C. Ritz crackers, crushed
1 large egg
¾ tsp. Worcestershire sauce
¾ tsp. lemon juice
¾ tsp. seafood seasoning
¾ tsp. Dijon mustard
½ C. mayonnaise
2 Tbsp. pimentos, chopped, if desired
Flour seasoned with Phillips Seafood Seasoning
Melted butter
Preparation Instructions
1. Preheat oven to 350 degrees F.
2. Combine the egg, Worcestershire sauce, lemon juice, seafood seasoning, Dijon mustard, and mayonnaise in a bowl.
3. Place the crab meat, parsley, and Ritz crackers into a separate bowl. Mix very lightly to combine.
4. Add the wet ingredients to the crab mixture and combine lightly.
5. Carefully use a knife to make a "pocket" in each chicken breast for the crab stuffing. Portion a mound of crab filling in the middle of each pocket and fold over to close.
6. If desired, add stuffed breasts to preheated grill pan to mark exterior before baking.
7. Place stuffed breasts into a casserole dish or deep baking pan. Season to your liking with seasoned flour and pour melted butter over top of each chicken breast.
8. Bake at 350 degrees F for 20-25 minutes, or until chicken is cooked to an internal temperature of 165 degrees.
OLD BAY® Crab Cakes Recipe
Ingredients
Serves: 4
2 slices white bread, crusts removed and crumbled
2 tablespoons mayonnaise
2 teaspoons OLD BAY® Seasoning or OLD BAY® 30% Less Sodium Seasoning
2 teaspoons McCormick® Parsley Flakes
1/2 teaspoon prepared yellow mustard
1 egg, beaten
1 pound lump crabmeat

Directions
