Salted Caramel Apple Cake
Cake:
1 1/2 cups brown sugar 1/3 cup vegetable oil 1 large egg 1 cup buttermilk 1 tsp. soda 1 tsp. vanilla 2 1/2 cups flour 2 cups chopped apples (Granny Smith works well) 1/2 cup caramel bits
Topping:
1 Tbs. flour 1 Tbs. butter 2 tsp. cinnamon 1 cup chopped nuts (walnuts or pecans)
Caramel topping (NOTE: make this just before serving the cake; this makes enough for about 2 servings, so change proportions according to your needs)
1/3 cup caramel bits 4 tsp. heavy whipping cream 1/2 tsp. Fleur De Sel (coarse sea salt), plus more for top
Instructions:
Preheat oven to 325°, mix topping ingredients, and set aside.
Mix together the cake ingredients, but add the caramels and apples together last after the other ingredients have been mixed.
Pour batter into a 9 X 13 pan, sprinkle with topping, and bake for about 45 minutes.
Melt the caramels, salt, and cream over very low heat, and pour it over each serving of cake. Sprinkle top with more Fleur De Sel.
NOTE: You can also use a good quality ready-made caramel topping, and sprinkle the Fleur De Sel over it. The cake is also very good without the topping; you can sprinkle powdered sugar over the top.
