What happens when brownies and chocolate chip cookies get married? They make brookies together. The delicious love child of two great desserts.
Chocolate Chip Cookie Dough ingredients:
1/2 cup butter
1/2 cup brown sugar
1/4 cup white granulated sugar
1 egg
1/2 tsp vanilla
1 cup + 2 tbsp all-purpose flour
1/2 tsp salt
1/2 tsp baking soda
1 cup semi-sweet chocolate chips
Make the chocolate chip cookie dough balls:
Melt the butter and place in a medium sized bowl.
Stir in the sugars until smooth
Stir in egg, vanilla.
Add baking soda and salt.
Stir in the flour until combined.
Stir in the chocolate chips.
Chill dough until firm enough to scoop out portion to make dough balls.
Once the dough is chilled enough to work with, make small dough balls (about 3/4" in diameter).
Place on a cookie sheet and freeze the dough balls until firm, about 30-40 minutes (depending on your freezer).
Brownie layer ingredients:
1 cup butter
2 cups semi-sweet chocolate chips
2 cups granulated sugar
4 eggs
1 tbsp vanilla
1 cup cocoa powder
1-1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
Make the brownie batter:
Melt butter and chocolate chips together either in the microwave or over low heat in a pot on the stove.
Stir until smooth and glossy and then pour into a large mixing bowl.
Beat in the granulated sugar and the eggs one at a time.
Blend in vanilla and cocoa powder.
Blend in baking powder, salt and the all purpose flour.
Assemble brookies:
Once batter in smooth, fold in about half of the frozen cookie dough balls.
Spread this mixture into the bottom of a 9x13"pan that has been lined with parchment paper and greased.
Take remaining dough balls and press them into the top of the brownie batter, spreading them more or less evenly.
Bake at 350 F for 35-45 minutes. I used a glass baking dish and they always take longer. Bake until a toothpick inserted comes out with lots of moist crumbs, but no raw batter.
Cool, remove from pan using parchment and cut into squares.
