BAKED CHERRY APPLE CIDER DOUGHNUTS

INGREDIENTS
Cherry Apple Cider Glaze:
1 cup powdered sugar
2 Tablespoons cherry apple cider (or just regular apple cider)
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon ginger
1/8 teaspoon cloves
Baked Cherry Apple Cider Doughnuts
1 cup flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
A pinch of salt
1/3 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon cloves
1/4 teaspoon nutmeg
1/4 teaspoon ginger
3/4 cup cherry apple cider (or 1/2 cup apple cider and 1/4 cup cherry juice or pureed cherries)
1/4 cup applesauce
2 teaspoons oil
INSTRUCTIONS
Cherry Apple Cider Glaze:
Combine all ingredients until smooth. Add cider or sugar to get to the consistency you want.
Dip the doughnuts in the glaze and allow it to harden.
Baked Cherry Apple Cider Doughnuts:
Preheat oven to 350 degrees F.
Combine all dry ingredients (flour through the ginger) in a large bowl.
Add the apple cider, applesauce and canola oil. Use an electric hand mixer to combine until smooth (mine broke so I just used a wooden spoon).
Pour the batter into a ziploc bag and cut one corner off. Use the ziploc to pipe the mixture into a doughnut pan that holds six doughnuts.
Bake at 350 for 9 or 10 minutes or until a toothpick comes out clean. Allow the doughnuts to cool completely before glazing.
NOTE: If you can’t track down any cherry apple cider (because I don’t think it’s a particularly common thing), I think there are a couple of different things you could try. I either add in some maraschino cherry juice (maybe a couple of tablespoons) OR you could puree some fresh or frozen cherries and add those. The same would go for making the glaze. You could also just forget the cherry altogether and stick to regular apple cider doughnuts, but you would be missing out.
